Tender beef patties topped with sweet caramelized onions and melted cheddar on soft buns.

# What You Need:

→ Sliders

01 - 1.1 lb ground beef (80/20 blend)
02 - 1 tsp kosher salt
03 - ½ tsp freshly ground black pepper
04 - 1 tsp Worcestershire sauce
05 - 1 tsp garlic powder

→ Caramelized Onions

06 - 2 large yellow onions, thinly sliced
07 - 2 tbsp unsalted butter
08 - 1 tbsp olive oil
09 - ½ tsp salt
10 - 1 tsp sugar (optional)

→ Assembly

11 - 8 slider buns
12 - 8 slices sharp cheddar cheese
13 - 2 tbsp mayonnaise (optional)
14 - 2 tbsp Dijon mustard (optional)
15 - 1 cup baby arugula or lettuce leaves

# How to Make It:

01 - In a large skillet over medium heat, melt butter with olive oil. Add sliced onions and salt. Cook, stirring frequently, for 15 to 20 minutes until onions are deeply golden and soft. Stir in sugar during the last 5 minutes if desired. Remove from heat and set aside.
02 - Combine ground beef, Worcestershire sauce, garlic powder, salt, and pepper in a medium bowl. Mix gently until just combined. Divide into 8 equal portions and shape each into a patty slightly larger than the buns.
03 - Heat a grill, grill pan, or skillet over medium-high heat. Cook patties for 2 to 3 minutes per side for medium doneness. Place a slice of cheddar on each patty in the last minute and cover to melt the cheese.
04 - Split slider buns and toast cut-side down on the grill or skillet for 1 to 2 minutes until lightly golden.
05 - Spread mayonnaise and/or Dijon mustard on the bottom buns if using. Layer with arugula or lettuce, followed by the cheddar-topped beef patty and a generous spoonful of caramelized onions. Cap with top bun and serve immediately.

# Expert Tips:

01 -
  • They're small enough to let people eat more without guilt, but substantial enough to actually satisfy.
  • Caramelized onions do the heavy lifting here—they turn something simple into something unforgettable.
  • You can prep everything ahead and cook to order, which means you get to actually enjoy your guests instead of being glued to the stove.
02 -
  • Don't press down on the patties while they cook—I learned this the hard way by flattening them into hockey pucks and wondering why nobody was impressed.
  • The caramelized onions really do need 15 to 20 minutes of low and slow cooking; rushing them means missing the transformation that makes these sliders special.
03 -
  • Let the ground beef come to room temperature for 15 minutes before mixing it—cold beef is harder to work with and doesn't cook as evenly.
  • The 80/20 blend is worth seeking out; it's the sweet spot where you get enough fat for flavor and juiciness without the greasiness of higher ratios.
