- Turn on your oven broiler or toaster oven to the highest setting. Position the rack about 6 inches from the heat source.
- Heat olive oil in a skillet over medium heat. Add panko breadcrumbs and toast, stirring constantly, until golden brown and fragrant, approximately 2 minutes. Remove from heat and set aside for garnish.
- Place the chopped cooked chicken in a mixing bowl. Sprinkle with garlic powder, Italian seasoning, salt, and black pepper. Toss until evenly coated.
- Divide the seasoned chicken evenly between two oven-safe bowls, creating an even layer at the bottom of each bowl.
- Spoon marinara sauce over the chicken in each bowl, then distribute the cottage cheese evenly on top of the sauce.
- Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the cottage cheese layer in both bowls.
- Place the bowls under the preheated broiler. Cook until the cheese is completely melted and begins to bubble and develop golden spots, approximately 3 to 5 minutes. Watch closely to prevent burning.
- Carefully remove the bowls from the oven using oven mitts. Sprinkle the toasted breadcrumbs evenly over both bowls and garnish with fresh chopped basil. Serve immediately while hot.
