# What You Need:

→ Chicken

01 - 1 large boneless, skinless chicken breast (approximately 7 oz), cooked and chopped
02 - 1/2 teaspoon garlic powder
03 - 1/2 teaspoon Italian seasoning
04 - 1/4 teaspoon salt
05 - 1/4 teaspoon black pepper

→ Sauce & Cheeses

06 - 2/3 cup low-fat cottage cheese (approximately 5.6 oz)
07 - 1/2 cup marinara sauce (approximately 4.2 fl oz)
08 - 1/4 cup shredded part-skim mozzarella cheese (approximately 0.9 oz)
09 - 2 tablespoons grated Parmesan cheese (approximately 0.7 oz)

→ Toppings

10 - 2 tablespoons whole-wheat panko breadcrumbs
11 - 1/2 teaspoon olive oil
12 - Fresh chopped basil for garnish

# How to Make It:

01 - Turn on your oven broiler or toaster oven to the highest setting. Position the rack about 6 inches from the heat source.
02 - Heat olive oil in a skillet over medium heat. Add panko breadcrumbs and toast, stirring constantly, until golden brown and fragrant, approximately 2 minutes. Remove from heat and set aside for garnish.
03 - Place the chopped cooked chicken in a mixing bowl. Sprinkle with garlic powder, Italian seasoning, salt, and black pepper. Toss until evenly coated.
04 - Divide the seasoned chicken evenly between two oven-safe bowls, creating an even layer at the bottom of each bowl.
05 - Spoon marinara sauce over the chicken in each bowl, then distribute the cottage cheese evenly on top of the sauce.
06 - Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the cottage cheese layer in both bowls.
07 - Place the bowls under the preheated broiler. Cook until the cheese is completely melted and begins to bubble and develop golden spots, approximately 3 to 5 minutes. Watch closely to prevent burning.
08 - Carefully remove the bowls from the oven using oven mitts. Sprinkle the toasted breadcrumbs evenly over both bowls and garnish with fresh chopped basil. Serve immediately while hot.

  • Fourty plus grams of protein means you stay full for hours without the post pasta crash
02 -
  • Oven safe bowls are non negotiable here, regular bowls will crack under the broiler and ruin everything
  • The cottage cheese might look strange layered over marinara, but trust the process and watch it transform
03 -
  • Let the bowls sit for two minutes after broiling so the cheese firms up slightly and is easier to eat
  • A little extra Italian seasoning in the breadcrumbs takes them from good to can not stop eating them good
