01 - In a small saucepan, combine water and sugar. Bring to a simmer over medium heat, stirring until the sugar is dissolved. Remove from heat, stir in dried lavender, and let steep for 15 minutes.
02 - Strain the lavender from the syrup using a fine-mesh sieve. Allow the syrup to cool completely before combining with lemon juice.
03 - In a large pitcher, combine lemon juice, lavender syrup, and cold water. Stir well until fully incorporated.
04 - Taste and adjust sweetness or tartness with additional water, syrup, or lemon juice, as desired to achieve preferred balance.
05 - Add ice cubes to the pitcher. Serve over ice, garnished with lemon slices and fresh lavender sprigs if desired.
