# What You Need:

→ Vegetables & Herbs

01 - 1 small yellow onion, finely chopped
02 - 3 cloves garlic, minced
03 - 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
04 - 1 cup baby spinach, loosely packed
05 - 1/4 cup fresh basil leaves, roughly sliced

→ Dairy

06 - 1 cup heavy cream
07 - 1/2 cup freshly grated Parmesan cheese, plus more for serving
08 - 2 tablespoons unsalted butter

→ Pasta

09 - 1 pound potato gnocchi (fresh, shelf-stable, or refrigerated)

→ Pantry

10 - 2 tablespoons olive oil
11 - 1/2 teaspoon chili flakes (optional)
12 - Salt and freshly ground black pepper, to taste

# How to Make It:

01 - Bring a large pot of salted water to a boil.
02 - Heat olive oil and butter in a large skillet over medium. Add onion; sauté until translucent, about 2 to 3 minutes.
03 - Stir in garlic and chili flakes. Cook for 1 minute until fragrant. Add sun-dried tomatoes and sauté for 1 to 2 minutes more.
04 - Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and let melt. Season with salt and pepper.
05 - Add baby spinach to the skillet and cook until wilted, approximately 1 minute.
06 - Add gnocchi to boiling water. Cook according to package instructions until they float, 2 to 3 minutes. Drain well.
07 - Add drained gnocchi directly to the skillet. Toss to coat, adding reserved pasta water if needed for desired sauce consistency.
08 - Remove from heat. Add fresh basil, toss gently, and serve immediately with additional Parmesan cheese.

# Expert Tips:

01 -
  • The luscious, creamy sauce clings to each pillow-soft gnocchi in the most satisfying way.
  • It’s a recipe that wins over picky eaters and is fast enough to whip up even after a long day.
02 -
  • If you try to rush the onion step, the sauce won’t taste nearly as sweet or balanced.
  • Starch from the gnocchi water turns the sauce glossy and helps everything cling—don’t skip it!
03 -
  • Taste and adjust the seasoning after adding the gnocchi, as the pasta water can mute the flavors.
  • Sliding the skillet off the heat to stir in basil keeps its flavor fresh and vibrant every time.
