Red White Blue Ice Cubes (Print View)

Layered red, white and blue ice cubes with berries and coconut to dress up drinks for patriotic gatherings.

# What You Need:

→ Fruit

01 - 1/2 cup fresh or frozen blueberries
02 - 1/2 cup strawberries, hulled and chopped
03 - 1/2 cup fresh coconut meat or unsweetened shredded coconut

→ Liquids

04 - 1 cup coconut water
05 - 1 cup natural blueberry juice
06 - 1 cup natural strawberry juice or cranberry juice

# How to Make It:

01 - Rinse and prepare all fruits. Hull and chop strawberries, and cut coconut meat if using fresh.
02 - Distribute blueberries into the bottom third of each compartment in an ice cube tray. Pour blueberry juice over berries to just cover. Place tray in freezer until solid, about 1 hour.
03 - Spoon coconut meat or sprinkle shredded coconut over the frozen blueberry layer. Pour coconut water to fill to the second third of each compartment. Return tray to freezer and freeze until firm, about 1 hour.
04 - Add chopped strawberries on top of the frozen layers. Pour strawberry juice or cranberry juice to fill each compartment to the top. Freeze until fully solid, approximately 2 additional hours.
05 - Once frozen through, release ice cubes from tray and use to chill lemonade, sparkling water, or cocktails.

# Expert Tips:

01 -
  • They turn any drink into something worthy of a holiday parade and no one will guess how simple they are.
  • I keep making these because they never fail to spark conversation - half the fun is waiting to see who notices them first.
02 -
  • Rushing the freezing between layers leads to muddy colors - resist the urge or your stripes will swirl together.
  • Once I tried milk for the white layer and wasn't ready for how creamy and opaque it made the cubes - cool but really different.
03 -
  • If using fresh coconut, always rinse and pat it dry so it stays white and crisp inside the frozen cube.
  • A pinch of lemon zest in the juice brightens both color and flavor - a tiny secret that makes every batch pop.
