05 - 1 small red onion, thinly sliced
06 - 3.5 oz sugar snap peas, halved
07 - 2 spring onions, sliced
08 - 2 cloves garlic, minced

12 - 2 tablespoons soy sauce
13 - 1 tablespoon rice vinegar
14 - 1 tablespoon sesame oil
15 - 1 teaspoon cornstarch
16 - 1/2 teaspoon crushed red pepper flakes

→ Garnish

17 - 1 tablespoon toasted sesame seeds
18 - Fresh coriander leaves

# How to Make It:

01 - Cook egg noodles according to package directions until al dente. Drain thoroughly, rinse under cold water to stop cooking and prevent sticking, then set aside.
02 - Whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, and cornstarch in a small bowl until smooth and fully combined. Reserve for later use.
03 - Heat a large wok or deep skillet over medium-high heat. Add oil and stir-fry turkey slices for 3-4 minutes until just cooked through and lightly browned. Remove from wok and set aside on a plate.
04 - Add additional oil to the wok if needed. Stir-fry minced garlic, grated ginger, and sliced red onion for 1 minute until fragrant and softened.
05 - Add bell peppers, carrots, and sugar snap peas to the wok. Stir-fry for 3-4 minutes until vegetables are crisp-tender and brightly colored.
06 - Return cooked turkey to the wok. Add prepared noodles and sauce mixture. Toss everything together vigorously for 2-3 minutes until well coated and heated through.
07 - Stir in spring onions and red pepper flakes. Transfer to serving plates, garnish with toasted sesame seeds and fresh coriander leaves. Serve immediately while hot.

# Expert Tips:

01 -
  • The sauce hits that perfect sweet and tangy balance that makes you want to lick the plate
  • It comes together in under 30 minutes but tastes like you spent way more effort on it
  • Turkey stays tender while the vegetables keep their crunch, giving you every texture in one bowl
02 -
  • Dont overcrowd your wok or the vegetables will steam instead of stir fry, work in batches if you need to
  • Have all your ingredients prepped before you start cooking because once you hit the heat, everything moves fast
  • Rinsing the noodles with cold water after cooking is essential to keep them from clumping
03 -
  • Cut all your vegetables into similar sizes so they cook evenly
  • Let your wok get properly hot before adding any ingredients
  • Toast your sesame seeds in a dry pan for 2 minutes before serving for maximum flavor
